These Banana and Blueberry pancakes are one of the first foods I gave Joe when we started BLW just over a month ago. I remember the first day he tried them, his eyes lit up and I couldn't believe how well he ate them considering he was only 6 months old, with no teeth!
I always batch cook these pancakes and freeze them. They are super convenient as you only need to take them out of the freezer an hour or two before and heat them up in the oven for 5-10 minutes!
Convenience is everything when it comes to baby led weaning!
Makes Approx. 16 Mini Pancakes
Ingredients
- 125g Self Raising Flour
- 250ml Full Fat Milk
- 1 Pouch (approx. 90g) Banana Puree - I use the Aldi Mamia one
- 1-2 Handfuls of Blueberries
Directions
- Combine the self raising flour, milk and banana puree in a bowl - If you don't have any banana puree you can use 1-2 mashed bananas but you may need to add a little more milk until you get a batter consistency.
- Add 1-2 handfuls of chopped blueberries.
- Heat your frying pan & add a little oil (I use fry light coconut oil.)
- Spoon a tablespoon of the batter into a frying pan to make a mini pancake - I can usually make 4 pancakes at a time.
- Fry on a low heat for a couple of minutes until golden, flip and cook on the other side.
- Then serve!
I make a large batch, leave to cool, pop a piece of baking parchment in between each pancake then place them into a container and freeze. These should last in the freezer for up to 1 month and I literally take 2 out either the night before and leave in the fridge to defrost, or 1-2 hours before at room temperature then warm in the oven before serving for 5-10 minutes.
